OMG thats a wheat free Cheesecake !
Crust:
1 box of wheat free graham crackers
about 1 and 1/2 cups of brown sugar
1 tablespoon of cinammon
1 cup of melted butter
Filling
4 pkg. (250 g each) Philadelphia Brick Cream Cheese, softened
3/4 cup sugar
4 eggs
1.5 tablespoon of lemon juice
1 tablespoon of vanilla
Have one bowl for filling one for crust . Blend the crust together . Whip the filling ingredients together until you get a nice smooth consistency
Spread the crust out evenly and press down until it starts to stick together. Place the cream cheese mixture ontop and smooth it out.
Bake for 40mins in 9 inch spring form .
Chill for a few hours .
Top with fresh strawberries . Or if your feeling really creative melt some chocolate and lace the top of your cheesecake with it before baking !
Sorry about the photo it was a birthday cake and it was devoured before I got a good photo .
Awesome gluten free sauce
BBQ SAUCE
1 cup ketchup
1/2 cup mustard
1/2 cup brown sugar
1/2 table spoon curry powder
1/2 table spoon cayenne
Don't be afraid to adjust the quantity of any of the ingredients . You can get different flavors with different amounts .
I use this recipe because a lot of sauces have "modified cornstarch" which means its cut with wheat

Brownies anyone ?
Brownies
Ingredients-
2 1 ounce squares unsweetened chocolate
3/4 cup coconut oil
1 cup organic sugar
1/2 tsp. vanilla
6 beaten eggs
3/4 cup sifted coconut flour
1/2 tsp. baking powder
1/2 tsp. fine ground Himalyan salt
1 cup chopped walnuts or pecans
In a saucepan, heat the chocolate and the coconut oil over low heat, stirring until melted. Remove from heat. Mix in sugar, eggs and vanilla. Stir in remaining ingredients. Spread evenly in a greased and lightly floured dish 8x8x2. Bake at 350 degrees F (175 C)for 30 minutes. Cool and cut into 2 inch squares. Makes 16 brownies

Test kitchen crackers
Well it wasn't an epic fail but it wasn't a winner . This was supposed to be cheese sticks but turned into a cracker . A few more ingredient tweaks are in need for sure . I did eat them tho . Weird thing was they got better the more days that went by ... Will attempt again . Hopefully with more success as a cracker .

Wheat free donuts
Plain donuts
1 cup tapioca flour
1 cup rice flour
1/2 cup sugar
1 tsp salt
1 tbs baking powder
1/2 tsp cinnamon * optional
2 tbs melted butter
1/2 cup milk
1 egg
*deep fryer w/oil
Preheat deep fryer .Sift dry ingredients together . Slowly add the melted butter until crumbly . Stir in milk then the egg . Mix until turned into dough . You can use a donut cutter or just roll into balls and drop into the preheated oil for 3 minutes until golden brown. Only do a few at a time or they will stick . Dry off on paper towels and roll in sugar .
I opted to make mine easter like so I took 4 bowls separated my dough and added food colouring to each bowl then fried . Golden on the outside coloured on the inside . Great for the kiddies!
Wheat free corn dogs !
1 cup yellow cornmeal
1/2 cup potato flour
1/2 cup rice flour
1/4 teaspoon salt
1/8 teaspoon black pepper
1/4 cup white sugar
4 teaspoons baking powder
1 egg
1 cup milk
1 quart vegetable oil for frying
2 (16 ounce) packages all beef frankfurters *check for wheat at the store
16 wooden skewers
*cornstarch
** no measurement for cornstarch as this is used to coat the wet hot dogs so that the batter will stick to them !
Preheat fryer to medium high heat .Skewer hot dogs . Dust plate with cornstarch .Roll hot dogs in cornstarch . Dip in batter and shake of extra batter .Fry for 3-4 minutes . Dry off oil on paper towel . Serve
I also use the same batter to make onion chips as seen in photo . Cut onion into large pieces dust with cornstarch . Dip in batter and fry for 3 mins .

Its been a busy week in the test kitchen
Good bye wheat hello rye . I immensely enjoy my rye crackers these days and have started to get a lil creative . This week I did a bbq pork on a rye cracker with melted cheese . Deeelicious . * always check bbq sauce for modified cornstarch
Next attempt was home made chips . I must admit that they didn't turn out as well as I'd hoped but I still ate them . Maybe next time I'll use the trusted russet instead of the yukon gold .Thicker slices may have been better as well . Thats wha=y its called a test kitchen .
These were my favorites ... home made peanut butter cups . YUM ! Sooo simple . Thank you pattycakes.ca . Her recipe was for almond butter cups which I have yet to find almond butter I like but the regular peanut butter worked well .The light sprinkle of salt on the top really made the dark chocolate just that much better .
1/2 c smooth peanut butter
about 2 Tbsp icing sugar
pinch of fine sea salt
1/2 tsp vanilla extract
1 cup high quality dark chocolate chips, or high quality dark chocolate broken into pieces (50-70% cocoa)
more sea salt for sprinkling on top
medium muffin liners/papers
Mix peanut butter , icing , sea salt and vanilla together for a paste .
Melt your chocolate in a double boiler or the microwave .
Line the bottom of your paper liners with a layer of chocolate .
Roll the peanut butter paste into a ball and slightly flatten and place on top of chocolate layer in the liner.
Once all the peanut butter has been placed pour the rest of the melted on the top fully covering the peanut butter .
Sprinkle a little amount of salt on top . The will enhance the dark chocolate .
Place in fridge until hard .
Devour!
